Question: does lances have damage bonuses to Infantry? They were excellent at dealing with infantry so I guess they should have...

heavy knights cavalry was supossed to disappear at 16 century...
then late knights was supossed to be the last remainder from the medieval era...it wouldnt make sense to keep upgrading them if they historically disappeared...
btw, this is a game. "royal knights" cpuld be the "late knights" for some factions... with different stats...non an upgrade...

Cataphract is extremely outdated, and late knights dont need an upgrade, in fact if you want to add a unit to their tree it should come before them. I based them off of late 16th century images, so we could have a 15th century version also, although it is kind of unnecessary
Guys carry on adding centuries to your unit images. Nice images btw

Did the 15 - 19thc use shield units?

Yes, shields were used until melee in general fell out of fashion. Especially 15 and 16th century. Not just large shields, bucklers were common in this period. They were used by rodeleros(sword and buckler men), by men at arms and regular soldiers also, alongside weapons like swords.
