In big maps, where the speed of elves can't entail a huge advantage, how can elves beat undead. Most of them has +5 armor...

elves would need an upgrade, like mithril arrows, that ignores pierce armor, or blunt arrows, that deal normal damage intstead of piercing

Fire archers can burn undeads. Use them.

Still, you need 4 turns for 1 fire archer and 1 single hit of the undead knight kills him...

Elves don't just have archers you know. An elf wizard can keep powerful ents blocking choke points while healing your units at the same time, and druids can keep wolves out to fill in a living wall with 7 attack after the nature tech. Both of these easily keep archers from being reached while fire archers set up burning effects on enemies. This is discounting ent warriors too.

Druids are absolutely boss. Lightning storm AoE, passive AoE heal that stacks with other druids, instant Ent every turn which are absolute tanks. Unicorn knights for the flanking or chasing lighter units, and ent throwers for smaller tougher units. Spike walls are nothing more than either a hasty defense, or a massive hedgerow (upon hedgerow.. Upon hedgerow) of thorns. In short, ent summons from druids and ent warriors are more than capable of handling undead, especially with druids AOE heal.

Oops.. By druids.. I meant wizards. Wizards have all the good stuff for Elves. Though, druids are great too!
